Apple & Pear Puff Pancake

Not only is this pear and apple pancake recipe simple to put together, but with the help of Crunch Pak® apple and pear slices, it’s even easier! There’s no peeling and slicing of the pears or apples. Ingredients:

3 tablespoons butter
4 large eggs room temperature
1 cup almond milk or any milk
1 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon ground nutmeg

Topping

3 tablespoons butter
1 14 oz package of Crunch Pak® apple slices
1 12 oz package of Crunch Pak® pear slices
3 tablespoons sugar
Maple syrup

Method
  1. Preheat oven to 425°. Place butter in a 10-in. cast iron skillet. Heat in the oven until butter is melted, approximately 2 minutes. Tilt pan to coat evenly with butter.
  2. Place eggs, milk, flour, sugar and nutmeg into a blender. Cover and process until smooth. Pour into hot skillet. Bake until puffed and starting to brown (approximately 15-17 minutes)/
  3. For the topping, heat butter in a large skillet over medium heat. Add Crunch Pak® apple slices, Crunch Pak® pear slices and sugar. Cook until the fruit is tender, stirring occasionally (approximately 13-15 minutes)
  4. Remove pancake from oven; fill with fruit mixture and serve immediately. Serve with maple syrup.
