Pumpkin-Shaped Apple Hand Pies
Get into the Halloween spirit with these delightful pumpkin-shaped apple hand pies! Using store-bought pie dough, they’re easy to make and perfect for a festive treat.
4 cups Crunch Pak Peeled Apple Slices, diced
1/4 cup brown sugar
1 tsp cinnamon
1 tbsp lemon juice
1 tbsp cornstarch
2 sheets of store-bought pie dough (or puff pastry)
1 egg, beaten (for egg wash)
Extra pie dough for pumpkin stems
In a medium saucepan, combine the diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat for 5-7 minutes, stirring occasionally, until the apples soften and the mixture thickens. Remove from heat and let the filling cool completely.
Preheat your oven to 375°F and line a baking sheet with parchment paper. Roll out the store-bought pie dough on a lightly floured surface.
Using a pumpkin-shaped cookie cutter (or freehand with a knife), cut out an even number of pumpkin shapes from the dough.
Use a small portion of the remaining pie dough to create stems. Roll small pieces of dough into thin strips or small shapes that resemble pumpkin stems.
Place half of the pumpkin-shaped dough pieces on the prepared baking sheet. Spoon about 1-2 tablespoons of the cooled apple filling onto each cutout, leaving a small border around the edges. Place a second pumpkin-shaped dough piece on top of each filled piece, and gently press the edges together to seal. Add the dough stems to the tops of each hand pie, gently pressing them into place.
Brush the tops of the hand pies with the beaten egg for a golden color when baked. Use a knife to score “pumpkin shapes” on the tops for added detail.
Bake in the preheated oven for 15-20 minutes, or until the pies are golden brown and crisp.
Allow the pies to cool slightly before serving. Enjoy these festive treats warm or at room temperature!
