Apple and Cucumber Gazpacho

Ingredients:

2 cucumbers peeled and chopped
1 cup Crunch Pak Peeled Apple Slices
1/2 cup unsweetened plain yogurt
2 garlic cloves, minced
1 tbsp white vinegar
2 tbsp olive oil
1/2 cup water
salt and pepper to taste

Directions:

Add all the ingredients to a blender and blend well for several minutes. Serve cold.
