Waldorf Rice Salad
- 8 cups Crunch Pak Sliced Apples (sweet or tart), diced
- 1 cup pineapple juice
- 12 cups brown or white cooked and cooled
- 4 cups celery, chopped
- 4 cups walnuts, coarsely chopped
- 1 1/2 cups carrots, finely chopped
- 3 cups low-fat vanilla or plain yogurt
- 1 1/2 cups low-fat mayonnaise
- 1T salt
- 1t cinnamon
- 1t ground coriander
In a large bowl, toss apples with pineapple juice; drain if necessary.
Stir in rice, celery, walnuts, raisins and carrots.
In separate bowl, blend yogurt, mayonnaise, salt cinnamon and coriander.
Stir dressing into apple mixture. Cover and refrigerate until ready to serve.
Serves: 6-8
