Spinach Salad with Apricot Chutney Dressing
Salad:
* 2 pounds fresh spinach, rinsed and torn into bite-sized pieces or 1 bag pre-washed spinach
* 1 bag (16oz) Tart Crunchpak Sliced Apples, diced
* 1/2 cup thinly sliced green onion
* 1/2 cup golden raisins
Dressing:
* 1/2 cup red wine vinegar
* 2/3 cup extra virgin olive oil
* 3T apricot chutney
* 1T curry powder
Combine the salad ingredients in a serving bowl. Mix the dressing ingredients in a smaller bowl and drizzle over the assembled salad.
Serves: 4-6
